Tagging onto our Producer Spotlight of Frieda’s Specialty Produce, we want to share this #seasonal recipe with you that uses one of Frieda’s unique items – Purple Stoke Yams! This recipe from One Hundred Dollars A Month is not only sinfully delicious, it’s super healthy too – and it lets the natural, beautiful flavor of the #yams shine through. Recipe below!

-Roasted Purple Sweet Potato Wedges with Rosemary & Thyme-
INGREDIENTS:
-2 medium purple stoke yams sliced into 1″x2″ pieces
-3 large carrots, sliced in to 1″x2″ inch pieces
-4 tbsp olive oil
-1 tbsp chopped fresh rosemary or 2 tsp dried
-1 tbsp chopped fresh thyme or 2 tsp dried
-1 tsp coarse salt
-1/2 tsp fresh ground pepper
INSTRUCTIONS:
Fire up the oven to 400 degrees. Toss all the ingredients together in a large bowl. Spread the purple sweet potatoes and carrots on a silpat or cookie sheet and roast until tender {about 45 minutes}.
