07 Dec Root Veggie Season – Why We Love Parsnips!
It’s Root Vegetable season! One of our favorite root veggies is the Parsnip, which we source from our friends at Lakeside Organic Gardens. Parsnips are often overlooked, but are easy to prepare & super nutritious as well as tasty! They’re often flavored with herbs like basil, dill weed, parsley, thyme & tarragon or with a hint of cinnamon & nutmeg to compliment their strong flavor (similar to the flavor of carrots). Parsnips are packed with folate, Vitamins C & B, dietary fiber & beneficial minerals. Either raw or cooked, these veggies ROCK! Here’s one of our favorite recipes for Roasted Parsnips with Rosemary from Martha Stewart – the perfect side dish for the holiday season!
